When my mom was in , she always bought bottles of milk that said lait. My mom read it /lait/, because she didn't speak French, and she thought it was 'light', i.e. non-fat milk. But no, the milk was whole milk and she gained 6 lbs. She was really shocked and angry! Lait is simply the French word for 'milk'.

No! Demi-écrémé is 1/2 creamed (semi skimmed) You can only get skimmed in long life (écrémé).
Yes, demi-écrémé is like reduced-fat milk. I haven't seen fat free milk in yet, and suppose that it wouldn't be popular there...
Or in Canada, you can also ask for milk by percentage of fat (ie. skimmed milk is 0%, you can also get 1% and 2% milk).
Chris, demi-crème will put pounds on you, it is half-and-half cream! Skimmed milk is lait écrémé, you were possibly thinking of lait demi-écrémé, semi-skimmed milk.
Ecrémé (skimmed) is very easy to find in . UHT or long life is the most common milk in supermarkets anyway.
Full-fat is LAIT ENTIER.
I think the colour coding is nationwide (everywhere the same) which is not the case in the UK where it varies from brand to brand!
