Honey-roasted chilli pork with sweet potato mash

Method

  1. For the sweet potato mash, boil the sweet potato in a saucepan of salted water for 6-8 minutes until tender. Drain, return to the pan and season with salt and freshly ground black pepper. Add the butter and mash with a potato masher or push through a potato ricer until smooth. Cover and set aside to keep warm.

  2. For the pork, season the pork with salt and freshly ground black pepper.

  3. Heat the oil in a frying pan and fry the pork for 4-5 minutes. Add the garlic and cook for a further minute.

  4. Add the soy sauce, honey and chilli and cook for a further 3-4 minutes, or until the pork is completely cooked through and the sauce has reduced slightly.

  5. To serve, slice the pork into three pieces and place onto a plate with the sweet potato mash. Pour over the pan juices and garnish with chives.
