Method

  1. Preheat the grill to high.

  2. Heat the oil in an ovenproof pan and sauté the prawns until pink and cooked through. Remove from the pan and roughly chop.

  3. In the same pan, sauté the shallots, jalapeño pepper and spring onions until soft.

  4. Remove from the heat and stir in the cream cheese, prawns, mayonnaise, cheddar, and sweetcorn and grill until bubbling.

  5. Serve with the tortillas.
