This pudding is quick and simple to rustle up, but tastes deliciously indulgent. You can use any red or purple jam, with or without 'bits' in it, for a tasty treat.

Method

  1. Put the jam and chocolate spread into a mug, and microwave for 30 seconds to soften. Stir in the oil and milk. Leave to cool for a minute or two.

  2. Beat in the egg then mix in the honey or golden syrup. Stir in the flour, to make a smooth batter.

  3. Place the mug back in the microwave for 90 seconds on High. It will rise quite a bit, but deflates again a little afterward.

  4. Top with an small dollop of jam and chocolate spread, then microwave for a few seconds until melted.

  5. Remove, and allow to stand for a minute or two before tucking in as it will be hot.

This pudding doesn’t keep well, so it’s best to eat it soon after making it.
